Pear Honey
4 cups crushed pears
4 cup sugar
1 can crushed pineapple
Combine all ingredients. Cook for 20-30 minutes
Place in jars, and process.
Makes about 4 ½ pints.

Peel the pears?
How long to "process"? Keep the juice from the pineapple in the mixture? This sounds good as I love this stuff to spread on toast and bagels!

Yes, peel and core the pears. Then crush them, I use a meat grinder.
No, do not drain crushed pineapple. Process: standard canning processes should be followed. Please research standard canning practices. I have a book on this I can quote at a later date. Typically place product (pear honey) into hot sterile jars, whip excess of from rim of jar, put lid on jar tight. Process in hot bath (boiling water) for 15-20 min. Store in a cool dry place. Good for up to one year if the lid sealed. Lid should seal within 10-15 minute after removed from bath, if it has not already. If the lid does not seal store in refrigerator for up to two months.
