I lived in Los Angeles while my children were younger and Jicama was one veggie that I saw a lot. I tried it once and thought it tasted more like a peeled white potato that was just a little sweet. I have recently been on a veggie dish kick and saw some in my local fruit and veggie market so I bought it. There were many recipies on the net for variations so I thought I would put something together with things I had on hand. This is the result.

I have to admit, the taste of Jicama still doesn't make me want to eat it much and I have recently found out that it is very starchy so I don't see that there is any health benefit. I am on a quest to find different veggies to eat that will make me want to consume more per day. Jicama doesn't really fit the bill fer me.
