Moroccan Chicken Kebabs

Oh. My. God. Made these last night and had a gigantic foodgasm. Found the recipe HERE so credit goes there.

These are rather low in calories, but I didn't calculate them. I will soon.


Moroccan Style Chicken Kebabs

ingredients:
  • 1 pound boneless-skinless chicken, cut into small pieces
  • 2 tablespoons lemon juice (~1/2 lemon)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin, toasted and ground
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, chopped
  • Lemons cut into wedges
  • Large cherry tomatoes, halved
  • Large Vidalia onion cut into wedges

Marinate the chicken in the mixture of the remaining ingredients for at least 20 minutes to overnight.

Skewer the chicken and veggies and lemon and grill over medium-high heat until cooked, about 4-5 minutes per side.
