Cilantro Lime Chicken & Broccoli
I made this off the cuff, there are no rules!
calories: about 270 per 8oz. serving
ingredients:
Saute cubed chicken and seasonings in olive oil until golden brown on the edges. Set aside for a minute.
Throw the broccoli in the pan and let that get going then throw the chicken in.
*If using frozen broccoli, saute just until it's thawed because you don't want it over cooked.
cut limes in half and squeeze them into the pan. Throw the rinds in there.
Season again and let simmer 5 minutes or less (depending on how you like your broccoli) and you're done!

- Broccoli florets (fresh or frozen is fine)
- salt, pepper, oregano, cilantro to taste
- 2-3 fresh limes
- lots of garlic
- Olive oil - just a little squiggle on the pan
