This was handed down to me when I "inherited" my mom's recipe file.
Rice Fritters
Ingredients:
1 cup sifted flour
2 tsp baking powder 1/2 tsp salt
2 eggs
1/3 cup coconut cream (can find in the Goya section of any US supermarket) or heavy cream.
1 tsp vanilla extract
1 cup soft cooked rice
Oil for deep frying
Sift the flour, baking powder, and salt into a bowl. Beat the eggs, cream and vanilla together then mix into the flour mixture until smooth. Stir in the rice.
Heat the oil to 370°F and drop the mixture into it by the tablespoon. Fry until golden brown.
Drain on paper towels and serve hot.
Makes about 24 fritters.
I have no idea what you're talking about so here's a bunny with a pancake on it's head
