Irish Soda Bread ~ Ireland

This is a traditionally Irish and scottish bread (in scotland I think they are called soda cakes) There's no yeast in it so it's really quick to make.

Ingredients:

500g Cream (plain) flour
500g Wholemeal flour
15g salt
30g cream of tartar
20g Bread (baking) soda
10g Caster (white) sugar
875g Buttermilk (cold)

Method:

Sieve the flours, salt, cream of tartar and bread soda together.

Disolve the sugar in the buttermilk, and add to the dry ingredients. Knead very gently to mix. The mixture is very soft and can be difficult to work with but don't over mix it as this will toughen the bread.

Split the dough in to 3 pieces (650g each). Mould into round balls (use flour to prevent sticking) and place on tray. Dust them with flour and cut a cross in the centre. Dust with flour and allow to rest for 10 mins.

Bake at 210 C for 35 to 40 mins. When the bread is ready in should sound hollow when tapped on the bottom.

This bread is great with soups, or toasted with jam.

It is also quite healthy. It can be made with all white flour, and you can add fruit.

Just a quick note for this... do NOT try and make this recipe on a bread machine, you will end up with bread that is rock hard!! Treat it more like you would a cake!
