Blackberry Sorbet<br />

<br />
    4 cups (560 g) blackberries<br />
    21⁄2 cups (600 ml) water<br />
    2 tablespoons (30 ml) lemon juice<br />
    1⁄2 to 1 cup (100 to 200g) cane sugar<br />
<br />
    Rinse the blackberries, then combine in a blender with the water and lemon juice. Purée until smooth, then press the mixture through a sieve to grab the seeds.<br />
    In a saucepan, whisk together the blackberry juice and sugar. Bring to a boil and reduce to a simmer. Let cook for 1 to 2 minutes, until the sugar is fully dissolved. Remove from the heat, transfer to a container, and place in the refrigerator to chill completely.<br />
    Freeze the sorbet mixture according to your ice cream maker’s directions, or, if not using an ice cream maker, place the mixture in a shallow pan and freeze. Once frozen, break into pieces and purée in a blender or food processor until creamy.<br />

<br />
<span style="font-weight: bold;" class="mycode_b"><span style="font-size: x-large;" class="mycode_size">Lime Sorbet</span></span><br />
<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><br />
<ul class="mycode_list">
</li>
<li>2 1/4 cups Water<br />
</li>
<li>3/4 Cup sugar<br />
</li>
<li>Zest of one whole lime<br />
</li>
<li>3/4 cup fresh squeezed lime juice. Include the pulp. (this takes aoub t 5 large or 9 small limes to make)<br />

In a medium saucepan, mix 1 cup of the water with the sugar and lime zest. <br />
Heat until the sugar is dissolved, constantly stirring.<br />
<br />
Remove from heat and add the remaining 1 1/4 cup of water and lime juice.<br />
Put into a bowl and allow to completely chill in the refrigerator.<br />
<br />
Once this is thoroughly cool, freeze in your ice cream maker.<br />
If you don't have one, you can put it in a container with a lid and freeze. Stir every hour until frozen.<br />
<br />
Serve a little on the soft side.<br />

Put sorbet in a Margarita glass and pour a shot of Tequila over it to make a Margarita Slushie. Top with a small amount of coarse salt.<br />

Use your imagination with alcoholic additives! The lime goes great with nearly anything.</span><br />

<span style="font-style: italic;" class="mycode_i">Makes about 2 1/2 quarts</span><br />

<span style="font-weight: bold;" class="mycode_b">ingredients:</span><br />

<li>5 cups fresh watermelon - cubed<br />
</li>
<li>6 - 8 Tbsp white sugar<br />
</li>
<li>2 tsp fresh lime juice<br />

Put the watermelon chunks into a food processor or blender.<br />
<br />
Add the lime juice.<br />
<br />
Blend until it's 'mashed up' and then start adding sugar.<br />
<br />
Taste. Add more sugar if you like it sweeter.<br />
<br />
Put this mixture in the refrigerator until fully chilled and then freeze it in your ice cream maker.<br />
<br />
If you don't have an ice cream maker, simply put it in a container a twice as big as needed and put it in the freezer.<br />
<br />
Stir every two hours until fully frozen.<br />
