<span style="font-weight: bold;" class="mycode_b"><span style="text-decoration: underline;" class="mycode_u">Grilled Stone Fruit Pizza</span></span><br />
<br />
<span style="font-weight: bold;" class="mycode_b">calories:</span> about 391 per serving (but I have no idea how many ounces are in the serving. this is their calculation. I will do one of my own)<br />
<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><br />
<ul class="mycode_list">
</li>
<li>1 - 16oz package pizza dough - or make your own from scratch<br />
</li>
<li>1 - 15oz container ricotta cheese<br />
</li>
<li>1/4 tsp dried rosemary leaves<br />
</li>
<li>1/4 c. pitted, sliced fresh cherries<br />
</li>
<li>1/2 c. thinly sliced peaches<br />
</li>
<li>1/2 c. thinly sliced plums<br />
</li>
<li>1/2 c. thinly sliced nectarines<br />
</li>
<li>1/2 c. arugula, torn <br />
</li>
<li>1/4 c. goat cheese<br />
</li>
<li>balsamic glaze<br />
</li></ul>

<br />
Roll dough into desired size/thickness and par-bake or par-grill based on package directions until slightly firm (about 8-10 minutes).<br />
<span style="font-style: italic;" class="mycode_i">*Grilling dough ahead of time instructions can be found <a href="http://twitchinkitchen.com/thread-559-post-1121.html?highlight=grilled+pizza#pid1121" target="_blank" rel="noopener" class="mycode_url">here</a>. I like to work the dough by hand and not roll it. Rolling pizza dough makes it tough. Also, it does not take very long to 'tighten' the dough, so just to be sure, stay right there watching it during this phase, you don't want it to char at all.</span><br />
<br />
Combine ricotta and rosemary and spread evenly over crust. Arrange sliced fruit evenly on top of ricotta mixture.<br />
<br />
Sprinkle with torn arugula and goat cheese and place back on grill (or in oven) for an additional 8-10 minutes until crust is firm and beginning to brown.<br />
<br />
Before servings, drizzle with balsamic glaze.<br />

<span style="font-weight: bold;" class="mycode_b">Ingredients:</span><br />
Watermelon<br />
Cantaloupe<br />
Honeydew melon<br />
Grapes - seedless<br />
Bing Cherries, pitted<br />
Kiwi fruit - in chunks<br />
Pineapple - in chunks<br />
Berries (in season)<br />
Juice of one whole lemon<br />

If you want to use 1/2 watermelon as a bowl:<br />
Using a melon baller, scoop out the flesh of the melons into little balls and put into a LARGE glass bowl. be careful to keep the juice from the watermelon inside the half cut melon when scooping. Drain this juice when done and save it for the variation if you want to use it.<br />
<br />
If you don't want to use the melon as the bowl, just cut up the fruit into large chunks.<br />
<br />
Cut up the rest of the fruit. Place in same glass bowl with melons. You can leave the grapes whole if they are small or halve them if they are gigantic.<br />
<br />
Put all this in a container or you can scoop out the rest of the watermelon if you bought a big one, cut the edges into a fancy design and put the fruit in there.<br />
<br />
Sprinkle with the lemon juice to help keep the fruit from discoloring.<br />
If you like your fruit salad sweet, you can sprinkle sugar on it. Mix it well and cover tightly and put in the refrigerator for several hours to let the flavors blend and juices develop.<br />
<br />
Serve anytime as a light refreshing treat. Great for breakfast too!<br />
<br />
<span style="font-style: italic;" class="mycode_i"><span style="font-weight: bold;" class="mycode_b">Variation:</span><br />
Take a bottle of Raspberry flavored Vodka and toss it into the melon with the left over watermelon juice. 50/50 mixture of vodka  to juice.<br />
<br />
Use enough vodka mix according to how big you made your salad. I usually make gigantic sizes! <br />
Your salad will last a very very long time if you put the vodka in. Vodka preserves it but it can make the fruit a bit mushy. <br />
Careful with the 'adult' version! you WILL get drunk fast!</span><br />

2 cups fresh or frozen blueberries - thawed<br />
1/8 teaspoon ground cinnamon<br />
1/2 cup whipping cream<br />
1 tablespoon sugar<br />
3 - 4 Kiwi fruit, peeled and cut up to make 1 cup<br />
<br />
In a shallow dish, mash 1 cup of the blueberries with a potato masher. Stir cinnamon into the mashed blueberries.<br />
<br />
In a medium bowl, beat whipping cream and sugar until very stiff. Fold in mashed blueberries.<br />
<br />
In individual 6-7 ounce glasses or dishes, layer whipped cream mixture, and remaining blueberries and kiwi fruit. <br />
<br />
Serve immediately or cover and chill up to 2 hours before serving.<br />
<br />
<span style="font-style: italic;" class="mycode_i">makes 6 servings.</span><br />

repeat the same as above only use these ingredients!<br />

4 cups fresh strawberries, stems removed and quartered (about 3 cups)<br />

1 lime cut into 8 wedges<br />
<br />
In a shallow dish, mash 1 cup of the strawberries with a potato masher.<br />
<br />
In a medium bowl, beat whipping cream, sugar and lime peel until cram is very stiff. Fold in mashed strawberries.<br />
<br />
In individual dishes as above in the blueberry fool, alternate berries and whipped cream mixture and top with a lime wedge.<br />
