<span style="font-style: italic;" class="mycode_i">I made this off the cuff, there are no rules!</span><br />
<br />
<span style="font-weight: bold;" class="mycode_b">calories:</span> about 270 per 8oz. serving<br />
<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><ul class="mycode_list">
</li>
<li>Chicken cutlets - cubed. use enough for as many meals you want to make<br />
</li>
<li>Broccoli florets (fresh or frozen is fine)<br />
</li>
<li>salt, pepper, oregano, cilantro to taste<br />
</li>
<li>2-3 fresh limes<br />
</li>
<li>lots of garlic<br />
</li>
<li>Olive oil - just a little squiggle on the pan <img src="https://twitchinkitchen.com/images/smilies/awink.gif" alt="Awink" title="Awink" class="smilie smilie_12" /> <br />
</li></ul>
<br />
Saute cubed chicken and seasonings in olive oil until golden brown on the edges.  Set aside for a minute.<br />
Throw the broccoli in the pan and let that get going then throw the chicken in. <br />
<span style="font-style: italic;" class="mycode_i">*If using frozen broccoli, saute just until it's thawed because you don't want it over cooked.</span><br />
cut limes in half and squeeze them into the pan. Throw the rinds in there. <br />
Season again and let simmer 5 minutes or less (depending on how you like your broccoli) and you're done!<br />

I whipped this up last night and served it with my own pasta sauce and a side salad and a hunk of bread and it only cost me 308 calories <img src="https://twitchinkitchen.com/images/smilies/yahoo.gif" alt="Yahoo" title="Yahoo" class="smilie smilie_30" /><br />
<br />
You can add any kind of meat to this as well and it works. <br />
Don't want sauce? Saute in garlic and olive oil and eat it straight up like that with a pinch of red pepper flakes (or not) and grated cheese (or not)!<br />

<br />
for another 75-100 calories you can add a small side salad with one or two tablespoons light dressing.<br />
<br />
Mahi over bruchetta with garlic steamed asparagus and a balsamic glaze drizzle - 175 calories:<br />
Mahi = 4.25 oz<br />
Bruchetta = 1/4 cup<br />
10 asparagus spears<br />

<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><br />
<br />
<span style="font-style: italic;" class="mycode_i">calories: TBD</span><br />
<ul class="mycode_list">
</li>
<li>2 chicken cutlets<br />
</li>
<li>1-2 whole (large) eggplant cut into cubes and seasoned with salt.<br />
</li>
<li>1/4 cup olive oil<br />
</li>
<li>salt &amp; pepper to taste<br />
</li>
<li>dried Italian herbs - I like those McCormick herb grinders for this. <br />
</li>
<li>red pepper flakes (optional)<br />
</li></ul>
<br />

Heat your pan to very hot and then add the oil.<br />

<span style="font-style: italic;" class="mycode_i">calories: 218 per 8oz serving</span><br />
<br />
Serves 6<br />
<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><ul class="mycode_list">
</li>
<li>1 pound chicken sausage<br />
</li>
<li>4-5 cups brussels sprouts cut into quarters long-ways<br />
</li>
<li>3 Tbsp olive oil<br />
</li>
<li>salt &amp; pepper to taste<br />
</li>
<li>dried Italian herbs - I like those McCormick herb grinders for this. <br />
</li>
<li>red pepper flakes (optional)<br />
</li></ul>
<br />
Have your sprouts and seasoning and herbs cut and ready for use.<br />
<br />
Heat your pan to very hot and then add the oil.<br />
<br />
Saute the sausage whole on a hot flame until the outside is nicely browned. <br />
Remove from heat and then slice the sausages on an angle.<br />
Return meat to the pan and lower the heat to half way.<br />
Make a circle (empty space) in the middle of the pan.<br />
Throw in the cut up sprouts into this space.<br />
<br />
Cover and let saute on a medium-high heat until the sprouts start to caramelize. <br />
<br />
Add the herbs and seasoning and toss all ingredients to mix .<br />
