<span style="font-weight: bold;" class="mycode_b"><span style="font-size: x-large;" class="mycode_size">Garlic Sauce</span></span><br />
<span style="font-style: italic;" class="mycode_i">Taratoor</span><br />
<br />
<span style="font-weight: bold;" class="mycode_b">Calories:</span> 50 per Tbsp<br />
<ul class="mycode_list">
</li>
<li>2 heads of garlic, peeled<br />
</li>
<li>1/3 cup extra virgin olive oil<br />
</li>
<li>1/3 cup fresh lemon juice<br />
</li>
<li>salt to taste<br />
</li></ul>
<br />
Place all ingredients in a blender and puree until a creamy sauce is produced. Add more lemon by the teaspoon if it's too 'garlicky'.<br />
Store in a jar or bottle with a tight fitting lid.<br />
Refrigerate until ready to use.<br />

1/2 cup mashed potatoes<br />

1 cup extra virgin olive oil<br />
a pinch of salt<br />
<br />
Squeeze the bread dry, put it in a food processor with the rest of the ingredients, blend to a smooth creamy paste.<br />

<br />
<span style="font-weight: bold;" class="mycode_b">Ingredients:</span><br />
<br />
1 cup tahini<br />
1/4 - 1/2 cup lemon juice or more<br />
1 1/2 cups water<br />
1/2 tsp cumin<br />
salt<br />
2 - 4 cloves garlic, crushed<br />
3 Tbsp chopped flat leaf parsley (optional)<br />
<br />
Blend the tahini with the lemon juice and water in a food processor. The paste will stiffen at first and then become smooth. Add enough water to achieve a light cream. Add cumin, season to taste with salt, and beat in the garlic.<br />
<br />
Pour over cold fish or serve in a separate bowl so people can use it to cover fish like a sauce. Garnish with parsley if you wish.<br />

<span style="font-style: italic;" class="mycode_i">This hot, spicy, garlicky mixture is the all purpose, ubiquitous Moroccan sauce for fish. It goes on every kind of fish - fried, grilled, baked and stewed. It's marvelous but I don't recommend it for fish with delicate flavors. <br />
Use half of it to marinate the fish for 1/2 hour before cooking and pour the rest on as a sauce before serving.</span><br />
<br />
<span style="font-size: medium;" class="mycode_size"><span style="font-weight: bold;" class="mycode_b">Chermoula Sauce and Marinade</span></span><br />
<br />
