this company has become a god save at our parties... we are going nuts over the mixes it supplies. The come pre-packaged and all you have to do is mix them with 8 oz of cream cheese. I am very fond of their spinach dip and am getting hooked on their other products. Although they are a little pricey I am addicted.

With getting back into the kitchen with Max.. I am going bonkers with the cooking again... So I will be in here more often.

This is an old favorite in our house around parties and holidays. It's easy to make and it goes great with chips of almost any sort. It's not low calorie by any stretch of the imagination but not everyone is watching their calories!
So, make a pint of this dip, put it out in the center of a bowl of chips and watch it disappear!

I wasn't sure where to put this and then realized Angie's suggestion of a snack food area would be perfect for this. This is a creation of my boyfriends and it's not quite straight up guacamole but more of a dip. It's smooth and creamy and put this out with a big bowl of salsa and chips and you've got a snack that will fill you up like a meal!

Guacamole Dip

Ingredients:

4 ripe avocados, mashed
1 small onion, diced medium small pieces
1 lime, halved
1/2 Roma or plum tomato - skinned, de-seeded diced small (optional)
1 - 3 tbsp. sour cream (pinch - to taste)
Sea Salt (pinch - to taste)
Chili powder (pinch - to taste)

In a large bowl, combine avocado, onion, tomato, 1 tablespoon sour cream, a pinch of salt and a few pinches of chili powder.

Once all ingredients are mixed well, squeeze the juice out of one lime half and mix well.

Taste.

Add additional sour cream until you get a smooth consistency to your liking. Remember, this is a dip and not regular guacamole. You want to scoop up this stuff with a chip easily.

Taste.

Add additional spices by the pinch to taste.

Let chill in the refrigerator for at least two hours before serving.
