			<description><![CDATA[<span style="font-style: italic;" class="mycode_i">This is a delicious summer sandwich salad I made up. It was inspired by some TV commercial for Subway (I think!). This is great served on a bed of lettuce or in a sandwich.<br />
Keep in mind I made this up as I went along so adjust the amount for your own needs. I made quite a bit so it lasts a week for our lunches. </span><br />

<br />
16 servings<br />
<br />
<span style="font-weight: bold;" class="mycode_b">Calories:</span> 1/3 cup = 126.05<br />
<br />
<span style="font-style: italic;" class="mycode_i">*lower the calories:</span><br />
substitute mayonnaise with mayonnaise made with extra virgin olive oil<br />
<span style="font-weight: bold;" class="mycode_b">Calories:</span> 1/3 cup = 63.02<br />
<br />
**<span style="font-style: italic;" class="mycode_i">This recipe meets the "low Sodium" requirements for anyone watching their sodium intake</span><br />
<br />
<span style="font-weight: bold;" class="mycode_b">ingredients:</span><br />
<ul class="mycode_list">
</li>
<li>3 chicken breasts, 4 oz each - cooked, chilled and diced <br />
</li>
<li>3 macintosh apples - diced - about 2 cups (leave the skins on)<br />
</li>
<li>3 stalks celery - diced (about 1 cup)<br />
</li>
<li>1/2 c of Craisins<br />
</li>
<li>1/2 c walnuts (unsalted) - your preference<br />
</li>
<li>3/4 c mayonnaise (less if desired)<br />
</li></ul>
<br />
While your chicken is chilling, dice the apples and celery. <br />
<br />
*A little trick I use to cool meat fast is to freeze a metal bowl, put the diced meat in and stick it in the freezer. I chop up a breast, stick it in the freezer while i chop up the next one - repeat till all chopped and let cool. <br />
<br />
Once the meat is cool mix the apples and celery. <br />
Add Craisins until you're happy with the amount.<br />
Add nuts until you're happy with the amount.<br />
<br />
Toss again and then start adding the mayonnaise until you have the amount you desire. Don't overdo it with the mayo! <br />
<br />
Serve on sandwiches or a bed of lettuce.<br />

Shred the meat instead of dicing. <br />

			<description><![CDATA[<span style="font-style: italic;" class="mycode_i">We tried this recipe tonight. I didn't have the avocados but I used cucumbers and mushrooms. The bulgur acted as 'toast' for the egg's yolk and it was a really nice meal. </span><br />

With whatever greens you have on hand, mound in the middle of your plate. Add a dollop of bulgur wheat, topping that with some sauteed super-diced onions and garlic, drop some cubed avocado and then lay a sunny-side up egg (the sunshine in my life) on top. Sprinkle with some kosher salt and freshly grated black pepper. You could add a dash of olive oil and a squirt of lemon too.]]></description>

4 cups baby spinach<br />
4 cups mixed greens<br />
1 cup sliced strawberries<br />
1 cup sliced Kiwi fruit<br />
1 can (15 oz) mandarin oranges, drained<br />
8 oz sugar snap peas, halved<br />
<br />
Raspberry Vinagerette salad dressing<br />
<br />
Toss all ingredients in a large bowl<br />
