			<title><![CDATA[Metabolism Boosting Spinach Salad]]></title>

			<description><![CDATA[<span style="font-style: italic;" class="mycode_i">This salad is claimed by it's author to boost your thyroid function thus boost your metabolism. She says, "This spinach based salad will boost the thyroid gland's output of metabolism-reviving hormones!"<br />
I found this recipe from someone who shared it on Facebook. I contacted the author for permission but she never wrote back. I'm posting it and giving her credit. If she wants it removed, I'll remove it, until I hear otherwise it stays.</span><br />

This is not a low calorie salad by any stretch of the imagination. <br />

<li>5 oz fresh spinach (about half of one of those 10 oz bags you buy in the produce aisle)<br />
</li>
<li>3/4 c. chopped celery<br />
</li>
<li>3/4 c. craisins (dried cranberries)<br />
</li>
<li>1 15 oz can of mandarin oranges with the liquid drained OR 1 or 2 fresh clementines or Halos OR 1 cup pomegranate seeds <br />
</li>
<li>1 large Granny Smith apple, sliced or diced your way. keep the skin on!<br />
</li>
<li>1 tsp lemon juice<br />
</li>
<li>1/3 c. pecans - chopped<br />
</li></ul>
OPTIONAL: top with feta cheese or Orecchiette pasta (little hats)<br />
<br />
<br />
Mix it all in a big bowl and serve it as a meal or as a compliment to your meal. <br />

<br />
<span style="font-weight: bold;" class="mycode_b">Ingredients:</span><ul class="mycode_list">

<li>1 pound tart eating apples <br />
</li>
<li>2 Tbsp lemon juice<br />
</li>
<li>1 cup chopped celery<br />
</li>
<li>3/4 cup coarsely chopped English walnuts<br />
</li>
<li>1/4 cup raisins (I like to use craisins instead)<br />
</li>
<li>1/2 cup seedless grapes - halved<br />
</li>
<li>1/2 cup mayonnaise<br />
</li>
<li>1/4 tsp salt<br />
</li>
<li>1/8 tsp cayenne pepper<br />
</li>
<li>crisp romaine lettuce leaves for the 'bed'<br />
</li></ul>
<br />
Wash, peel, core and chop the apples. Sprinkle with the lemon juice and toss gently to coat completely. This is to keep apples from turning brown on you.<br />
<br />
Mix the apples, celery, raisins, grapes and mayo. <br />
Add the cayenne and salt. Refrigerate for an hour or two to get flavors to blend. <br />
<br />
When ready to serve make a bed with the romaine lettuce leaves and put the salad on top, sprinkle in the walnuts.<br />
Or to make individual servings, make small lettuce 'cups' out of the romaine leaves, put about a cup of salad in each one and sprinkle with the walnuts.<br />
<br />
<span style="font-weight: bold;" class="mycode_b">Note:</span> this salad needs to be served cold. Never put the nuts in before serving or they will absorb any liquid from the mayo and lose their crispness on you.<br />
Ideally all the ingredients should be chilled before combining them as well.<br />
<br />
<span style="font-weight: bold;" class="mycode_b">Variation:</span> Add a handful of grilled chicken breast chunks to this for a meal type salad!]]></description>
