One of the residents of the park brought these to one of our picnics. Oh, was it good!!
Calico Beans
preheat oven to 350 degrees
6 strips bacon, cooked, drained, crumbled
1 large onion
1/2 cup dark brown sugar
1/2 cup ketchup
1 Tablespoon cider vinegar
1 teaspoon dry mustard
1 large can Bush's Baked Beans, undrained
1 regular can kidney beans, drained
1 regular can butter beans, drained
1 regular and lima beans, drained
Saute onion and add next onion, brown sugar, ketchup and vinegar and simmer for 10-15 minutes. Add the beans and and crumbled bacon to the sauce and bake in a casserole dish at 350 degrees for 30-40 minutes.
Admin note: I moved this to the veggie only casserole section although it has bacon in it. To make it true veggie only, simply omit the bacon.
It might lack a bit of flavor but beans provide the protein needed in a vegetarian diet.
