Eric, but my friends call me Hillbilly.
What I bring to the table is years Of Experience In the Meat Industry and My Love for grilling. Most of the Ideas , Recipes and information that I will bring to the party will be from the grilling side of things. I am an Assistant Director Of meat Operations, merchandising, processing and slaughtering of Cattle, Hogs, and Poultry. I have two degrees in this field and over 14 years of experience. I will bring how to video's , as well as pictorials from grilling , to basic poultry brake down, to portional thickness for steaks, Roast, and so forth. I am here to help all I can, and if you have any Questions, comments or what not, please By All means my Butcher Block is always open.
