This is a wonderful light and healthy salad. I make this often in the hot summer months when it's just too hot to eat or grill! Great as a poolside meal.
Chicken & Citrus Salad
Ingredients:
1 or 2 grilled and seasoned fully cooked chicken breasts - shredded or sliced or diced (your choice)
4 cups baby spinach
4 cups mixed greens
1 cup sliced strawberries
1 cup sliced Kiwi fruit
1 can (15 oz) mandarin oranges, drained
8 oz sugar snap peas, halved
Raspberry Vinagerette salad dressing
Toss all ingredients in a large bowl
Options: We like to toss in toasted pine nuts.
