Potato Bacon Torte - Twitchin Kitten - 04-05-2008

This is wonderful with a nice tender steak!

Potato Bacon Torte

Ingredients:
3 or 4 baking potatoes
Package of bacon
Chunk of Parmesan cheese
freshly ground pepper
salt
Parchment baking paper
6 inch wide x 2 or 3 inch deep cast iron pan that is safe to go in the oven to bake.

Line the pan with parchment paper and then line the pan with bacon and let much of it hang over the edge. It will be folded over the top of the 'taters once it's ready to bake.

Slice the potatoes into circles about 1/8 th inch thick (give or take in thickness)

Now, layer the potatoes, in a single layer on the bottom of the pan.
Don't worry if there are 'holes' between the slices, that's OK.

Make layers until they reach the top like so:

grate some cheese to cover
coarsely ground black pepper
salt

Do this until the stack is just above the top of the rim of the pan.
Now, fold the overhanging bacon to make a 'lid'. I usually put a toothpick weaved into the bacon to keep it from opening up and curling during cooking.

Trim off any excess paper and make sure to leave about an inch all around.
Bake in a 325 degree oven for a couple of hours, until a metal pick inserts into the potatoes smoothly.

Let cool a few minutes and slice into wedges like pie and serve with steak with caramelized onions, and a shitake mushroom sauce.

We are talking heaven to the taste buds people!
