You know that one sounds good. I like more veggies than meat too and I do the same thing!
Did you brown the meat first or just toss it in and let it cook with everything else?

I just tossed it in and let it cook with everything else. It doesn't look very appealing when you first mix it together, but something magical happens to it during the cooking process lol.

How would that be if I added more veggies to it like sliced onions, green beans or peas and maybe even zucchini?

I would probally add the zucchini later than the rest of the ingredients so it doesn't get mushy.
