We eat this instead of hamburgers on the grill more often than not!
This is but one of many ways to make Kufta. More variations will come as time goes on.

The traditional way to serve Kufta in Aleppo, Syria is with a side dish of tomatoes that have been grilled separately, then peeled, mashed and seasoned.

I'll post that one in the veg section later.

Kufta Barbecue
Kufta Mishwiya

Ingredients:
1 pound finely ground lean beef or lamb
1 small onion, finely chopped
1/2 cup finely chopped parsley (flat leaf/ Italian)
1 teaspoon dried mint
1/4 teaspoon cinnamon
pinch of allspice
pinch of cayenne
4 tablespoons for frying if frying (preferred method is grilling)
salt & pepper to taste

Mix all the ingredients thoroughly until the mixture reaches a dough-like consistency. Form into long, cylinder shapes around skewers.

Broil in oven or over charcoal BBQ, or saute in a frying pan in heated butter, turning frequently to brown evenly. Serve with Arabic (pita) bread, yogurt, and salad.

Note: for a Moroccan version, vary the seasoning, using ground cumin and coriander in place of the mint.
