A fatty is a smoked snack usually made while smoking something that takes a bit of time. I usually put a few on to munch on thoughout the day as I run the smoker.
1 breakfast sausage roll. Bob evans, jimmy dean ect. (bulk sausage does not work well for this)
Diced onion
Cream cheese
Sharp cheddar chease.
Press out the sausage to about 1/4-1/2 inch thck oval on greased serface
lay a small amout on remaining ingrediant in center of meat oval.
fold and seal together roll back into log shape.
Put on smoker for aprox 3 hours turning one time half way though. at aprox 200-225 degrees.
Is smoking with direct heat cut cook time bace to 1 1/2- 2 ours
If using a grill i would recommend wrapping the fatty in foil and cooking for about and hour or so.
