OK this stuff is absolute heaven! It's got the right amount of tart and sweet and it's easy to make.
Lime Sorbet
ingredients:
In a medium saucepan, mix 1 cup of the water with the sugar and lime zest.
Heat until the sugar is dissolved, constantly stirring.
Remove from heat and add the remaining 1 1/4 cup of water and lime juice.
Put into a bowl and allow to completely chill in the refrigerator.
Once this is thoroughly cool, freeze in your ice cream maker.
If you don't have one, you can put it in a container with a lid and freeze. Stir every hour until frozen.
Serve a little on the soft side.
Variations:
When mixture is cooled, before putting it in your ice cream maker to freeze, add a few tablespoons of Champagne or sparkling wine.
Put sorbet in a Margarita glass and pour a shot of Tequila over it to make a Margarita Slushie. Top with a small amount of coarse salt.
Use your imagination with alcoholic additives! The lime goes great with nearly anything.

- 3/4 Cup sugar
- Zest of one whole lime
- 3/4 cup fresh squeezed lime juice. Include the pulp. (this takes aoub t 5 large or 9 small limes to make)
