This is a delicious summer sandwich salad I made up. It was inspired by some TV commercial for Subway (I think!). This is great served on a bed of lettuce or in a sandwich.
Keep in mind I made this up as I went along so adjust the amount for your own needs. I made quite a bit so it lasts a week for our lunches.


Twitchy's Summer Chicken Salad

Calories: 1/3 cup = 126.05

*lower the calories:
substitute mayonnaise with mayonnaise made with extra virgin olive oil
Calories: 1/3 cup = 63.02

**This recipe meets the "low Sodium" requirements for anyone watching their sodium intake

ingredients:
  • 3 chicken breasts, 4 oz each - cooked, chilled and diced
  • 3 macintosh apples - diced - about 2 cups (leave the skins on)
  • 3 stalks celery - diced (about 1 cup)
  • 1/2 c of Craisins
  • 1/2 c walnuts (unsalted) - your preference
  • 3/4 c mayonnaise (less if desired)

While your chicken is chilling, dice the apples and celery.

*A little trick I use to cool meat fast is to freeze a metal bowl, put the diced meat in and stick it in the freezer. I chop up a breast, stick it in the freezer while i chop up the next one - repeat till all chopped and let cool.

Once the meat is cool mix the apples and celery.
Add Craisins until you're happy with the amount.
Add nuts until you're happy with the amount.

Toss again and then start adding the mayonnaise until you have the amount you desire. Don't overdo it with the mayo!

Serve on sandwiches or a bed of lettuce.

Options:
Shred the meat instead of dicing.
