Chicken Paprika

Ingredients
2 - 3 1/2 pound frying chickens, disjointed
2 tsp salt
1 tsp pepper
4 tbsp butter
6 onions, peeled and sliced thin
1 1/2 tbsp (sweet) paprika
1/2 pint sour cream

Wash and dry the chicken. Season with salt and pepper rubbing in well. both sides.

Melt the butter in a heavy saucepan. Add the sliced onions and the paprica, cook for 3 minutes, stirring constantly. Add the chicken and brown over high heat. Lower the heat and cover the pan.
Cook for 30 minutes, stirring occasionally. Add a little water if the pan becomes too dry.
Add the sour cream, stir well and let simmer for another 15 minutes.

Server with Nockerl, the popular dumplings of the Austrians.
Pour a little of the sauce over the dumplings.
