Long is the battle to which has the best clam chowder. NY and Boston have been competing against each other from sports to food for ages. I like both versions of the soup so I posted both recipes for you to try.
Manhattan Clam Chowder
Serves 6
Ingredients:
- 1 onion, sliced
- 1 clove garlic, pressed/minced
- 1/4 cup chopped celery
- 1/4 cup salt pork or bacon, chopped
- 1 cup chopped potatoes
- 2 cups boiling water
- 2 cups canned tomatoes, (sieved to remove seeds and large chunks)
- 2 cups chopped fresh or canned clams
- 1 tsp salt
- 1/8 tsp pepper
- 1/8 tsp thyme
- Crackers to serve with
Saute the onion, garlic and celery with the bacon for about 5 mintutes stirring constantly. Add the potatoes, water and tomatoes.
Cover and simmer 15 minutes until the potatoes are tender.
Add the chopped clams, salt pepper and thyme. Simmer a few minutes more.
Serve with crackers.
Variations: You can add other vegetables to this soup if you like such as:
- 1/4 cup chopped carrots
- 2 Tbsp minced green pepper
