This salad was invented in the famous Waldorf Astoria Hotel in New York City, NY USA.

Waldorf Salad

Ingredients:
  • 1 pound tart eating apples
  • 2 Tbsp lemon juice
  • 1 cup chopped celery
  • 3/4 cup coarsely chopped English walnuts
  • 1/4 cup raisins (I like to use craisins instead)
  • 1/2 cup seedless grapes - halved
  • 1/2 cup mayonnaise
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • crisp romaine lettuce leaves for the 'bed'

Wash, peel, core and chop the apples. Sprinkle with the lemon juice and toss gently to coat completely. This is to keep apples from turning brown on you.

Mix the apples, celery, raisins, grapes and mayo.
Add the cayenne and salt. Refrigerate for an hour or two to get flavors to blend.

When ready to serve make a bed with the romaine lettuce leaves and put the salad on top, sprinkle in the walnuts.
Or to make individual servings, make small lettuce 'cups' out of the romaine leaves, put about a cup of salad in each one and sprinkle with the walnuts.

Note: this salad needs to be served cold. Never put the nuts in before serving or they will absorb any liquid from the mayo and lose their crispness on you.
Ideally all the ingredients should be chilled before combining them as well.

Variation: Add a handful of grilled chicken breast chunks to this for a meal type salad!
