Blueberry Kiwi Fool

2 cups fresh or frozen blueberries - thawed
1/8 teaspoon ground cinnamon
1/2 cup whipping cream
1 tablespoon sugar
3 - 4 Kiwi fruit, peeled and cut up to make 1 cup

In a shallow dish, mash 1 cup of the blueberries with a potato masher. Stir cinnamon into the mashed blueberries.

In a medium bowl, beat whipping cream and sugar until very stiff. Fold in mashed blueberries.

In individual 6-7 ounce glasses or dishes, layer whipped cream mixture, and remaining blueberries and kiwi fruit.

Serve immediately or cover and chill up to 2 hours before serving.

makes 6 servings.



Mango Papaya Fool

3-4 medium fresh mangoes and or papayas. seeed, peeled and chopped (about 3 cups)
1/2 cup whipping cream
1 tablespoom sugar
1 teaspoon ground nutmeg

repeat the same as above only use these ingredients!



Strawberry Lime Fool

4 cups fresh strawberries, stems removed and quartered (about 3 cups)
1/2 cup whipping cream
1 tablespoon sugar
1/4 teaspoon finely shredded lime peel
1 lime cut into 8 wedges

In a shallow dish, mash 1 cup of the strawberries with a potato masher.

In a medium bowl, beat whipping cream, sugar and lime peel until cram is very stiff. Fold in mashed strawberries.

In individual dishes as above in the blueberry fool, alternate berries and whipped cream mixture and top with a lime wedge.
