Zuchinni Fritters

Veggie 
4 cups shredded zuccini

1/2 medium onion or 4-5 green onions with tops finely chopped

1 cup flour

2 eggs, beaten

1 cup grated chedder cheese

salt and pepper to taste

Mix all ingredients together in bowl and drop by heaping tablespoons onto hot oiled or buttered griddle. cook 3 to 4 minlutes each until both sides are golden brown.

Good with applesauce or sour cream.

can double or halve it easily. even your zuchinni haters will like these
