Grilled Stone Fruit Pizza

Credit goes to Stop & Shop grocery store for this one. Found it while going through my account with them and I promise to take a picture next time I make this.

Grilled Stone Fruit Pizza

calories: about 391 per serving (but I have no idea how many ounces are in the serving. this is their calculation. I will do one of my own)

ingredients:
  • 1 - 16oz package pizza dough - or make your own from scratch
  • 1 - 15oz container ricotta cheese
  • 1/4 tsp dried rosemary leaves
  • 1/4 c. pitted, sliced fresh cherries
  • 1/2 c. thinly sliced peaches
  • 1/2 c. thinly sliced plums
  • 1/2 c. thinly sliced nectarines
  • 1/2 c. arugula, torn
  • 1/4 c. goat cheese
  • balsamic glaze


Roll dough into desired size/thickness and par-bake or par-grill based on package directions until slightly firm (about 8-10 minutes).
*Grilling dough ahead of time instructions can be found here. I like to work the dough by hand and not roll it. Rolling pizza dough makes it tough. Also, it does not take very long to 'tighten' the dough, so just to be sure, stay right there watching it during this phase, you don't want it to char at all.

Combine ricotta and rosemary and spread evenly over crust. Arrange sliced fruit evenly on top of ricotta mixture.

Sprinkle with torn arugula and goat cheese and place back on grill (or in oven) for an additional 8-10 minutes until crust is firm and beginning to brown.

Before servings, drizzle with balsamic glaze.

*note: I substituted the goat cheese for feta because I hate goat cheese :P - it was awesome
I used fresh rosemary leaves, chopped lightly and it gave a bolder flavor.
