Metabolism Boosting Spinach Salad

This salad is claimed by it's author to boost your thyroid function thus boost your metabolism. She says, "This spinach based salad will boost the thyroid gland's output of metabolism-reviving hormones!"
I found this recipe from someone who shared it on Facebook. I contacted the author for permission but she never wrote back. I'm posting it and giving her credit. If she wants it removed, I'll remove it, until I hear otherwise it stays.


*NOTE: I'm not sure of those calorie counts and I'm going to have to check them on my own*

This goes hand in hand with Sweet Vinegar Dressing

This is not a low calorie salad by any stretch of the imagination.
I will give all variations BELOW.
calculations do NOT include dressing!


Metabolism Boosting Spinach Salad

ingredients:
  • 5 oz fresh spinach (about half of one of those 10 oz bags you buy in the produce aisle)
  • 3/4 c. chopped celery
  • 3/4 c. craisins (dried cranberries)
  • 1 15 oz can of mandarin oranges with the liquid drained OR 1 or 2 fresh clementines or Halos OR 1 cup pomegranate seeds
  • 1 large Granny Smith apple, sliced or diced your way. keep the skin on!
  • 1 tsp lemon juice
  • 1/3 c. pecans - chopped
OPTIONAL: top with feta cheese or Orecchiette pasta (little hats)


Mix it all in a big bowl and serve it as a meal or as a compliment to your meal.

calorie counts: (without dressing!)
entire meal = 19 ounces of salad // as a side compliment = 8 oz (1 cup)
entire salad as a meal: 925
with Feta Cheese: 1122
with Orecchiette pasta: 1144
as a side with meal: 407
with Feta Cheese: 495
with Orecchiette pasta: 505
