Chicken with Caramelized Eggplant

In our house we just love eggplant and I'm always coming up with a creative idea on how to make them. This time it's with chicken, very much the same as the sausage and brussels sprouts.

Chicken with Caramelized Eggplant

ingredients:

calories: TBD
  • 2 chicken cutlets
  • 1-2 whole (large) eggplant cut into cubes and seasoned with salt.
  • 1/4 cup olive oil
  • salt & pepper to taste
  • dried Italian herbs - I like those McCormick herb grinders for this.
  • red pepper flakes (optional)

Have your eggplant and seasoning and herbs cut and ready for use.

Heat your pan to very hot and then add the oil.

Saute the eggplant on a hot flame until it breaks down and starts to caramelize. Toss in the herbs and pepper and continue to saute until the eggplant starts to soften.

Make a circle (empty space) in the middle of the pan.
Put your seasoned chicken cutlets in that space and turn up the heat.

Cover and let saute on a medium-high heat until the chicken start to caramelize.

Add red pepper flakes for the last 3 minutes of cooking for extra spice.

Serve hot with some Parmesan cheese (optional) and a toss salad.
