Stuffed Scallops on the Half Shell

I can't give you the ingredients here because I purchased these from my meat vendor. I can however give you a cooking guideline.

Pre-heat your (gas) grill on high. Place the scallops on the upper rack shells down.

Heat for approximately 10 minutes with the lid closed. When you see the shells begin to discolor at the edges they are ready!

I was doing a combination of foods simultaneously yesterday (Labor Day weekend) and the scallops were on the grill along with Tuna steaks and NY Strips.

Quite the Surf and Turf BBQ!

I think these would go nice with a crab meat and shrimp type stuffing.

Stuffing is easy to make for most things.

Off the top of my head I'd say do this:

mince crab meat and shrimp
seasonings - I'd go with spicy, or just a little of that Old Bay seasonings.
For an Italian flair, dig out some oregano, basil, parsley.

Mix your spices and meat in flavored bread crumbs, not too much bread though!
Moisten with a LITTLE bit of water. Just enough to moisten it all and then stuff each shell.

This is kind of a 'wing it' thing but you get the idea. The bread crumbs is what holds your stuffing on the shell.

Get creative! nearly any spice combo will work. You want the shrimp and crab meat to be the main ingredient and not bread crumbs, keep that in mind when preparing stuffing for these.
