Strawberry Avocado Salsa

Another creation by Tony Tantillo from CBS Noon news here in the NYC area. This stuff is awesome as a burger topping!

16-17 servings

calories: 32 calories per 1/4 cup

Strawberry Avocado Salsa

Ingredients:
  • 16 oz container of fresh strawberries - diced
  • 2 ripe avocados - diced
  • 1 jalapeno pepper - seeded and diced small
  • 3 Tbsp cilantro chopped fine
  • 1/2 red onion - diced (add more or less depending on the size proportionate to the other ingredients)
  • Champagne vinegar
  • juice of 1 fresh lime
  • pepper

Dice up onion, avocado and strawberries.
Chop cilantro and add in to the other ingredients
Squeeze the lime over it all
Add a splash or two of the champagne vinegar - careful not to add too much!
Pepper to taste.

Let set up in the fridge, covered for half an hour before serving.

OOH! Last night when I made that I forgot the jalapeno pepper! Then I forgot to add it to the ingredients list. All fixed but I will say it tasted just fine without the pepper.

Give it a go as a burger topping. Works for beef or poultry burgers!
