Bullseye breakfast - Angie - 09-04-2008

1 egg
1 slice of bread
2 pads of butter

Take a medium to small sized "round" cookie cutter (alternately you can use the rim of a glass). Lay the slice of bread on a flat surface (maybe put a piece of waxpaper on the table or cutting board).
Cut out a circle in the center of the bread slice and put it aside for use. Sparingly spray the pan with your cooking spray then place it on the stove and heat on a medium flame until evenly hot on the surface.

Place one pad of butter in the pan as soon as it melts place the bread in pan. Crack the egg and pour into the whole that you cut into the bread. You flip the bread over according to how you enjoy your eggs. If you like your eggs scrambled then flip the bread over once the egg has turned solid. If you like your egg soft in the middle then turn sooner. etc. Once both side have had a chance to cook then remove the bread from the pan and place the cut out portion in the pan with the other pad of butter. Flip when golden brown or toasted to desired color and remove from pan. You can spread some jam on that portion and eat with your bullseye.
