Spoon bread is simply a very rich and dense corn bread, a dish so dense that it must be served up with a spoon.
It's been told that General George Washington loved this dish and it was served quite frequently at Mount Vernon!


Virginia Spoon Bread

serves 8

Ingredients:

1 cup cornmeal, (white or yellow)
1 1/2 tsp salt
2 cups milk, scalded
2 1/2 tsp baking powder
2 eggs, separated

Mix the cornmeal and salt together and stir them into the hot milk. Cook over very low heat, stirring all the time until thick and smooth.
Continue cooking for 15 mins longer stirring occasionally. Cool slightly.

As that is cooling, beat well your egg yolks and beat till stiff the whites.
Stir in the baking powder and the egg yolks, then fold in the beaten whites. Turn all this into a greased casserole or 8 inch square pan.

Bake in a moderate oven - about 375°F - for around 35 minutes or until bread is firm and the crust is browned.

Serve directly from the baking dish.
